Bulverde is the kind of place people drive through on 281 without registering that they passed anything. It does not have a walkable square or a historic district doing the work for it. What it has is spread out, and a lot of it is a reason to pull over.
There is a working rodeo every Saturday night through November. There is a saloon that has been serving since 1890. There are two wine bars and a steakhouse with a dance floor, all within about ten minutes of each other. Here is how a day, or a night, in Bulverde can go.

Saturday Night Rodeo runs every Saturday from the first weekend in March through the last weekend in November, with live music and dancing on the grounds from 7:30 PM. Fridays bring an acoustic set from 7:00 to 9:00 PM. Tickets have been running in the $50 to $60 range, the booking page carries current pricing, and fall Saturdays sell out with regularity.
Insider tip: buy ahead and get there early. The stretch before the first event is when the food line is short and the grounds are easy to walk.
Tejas Steakhouse & Saloon sits on the same grounds and is open Wednesday through Saturday, with a dance floor built for two-stepping. Eat there before the rodeo, then come back after the last event. You have already paid for the parking. tejassteakhouse.com

A Hill Country saloon in business since 1890, with a refreshed menu and patio. Live music on weekends, a singer-songwriter open mic on Sundays from 4:00 to 7:00 PM, and kids eat free on Thursdays, with a magician.
Insider tip: the Sunday open mic is the quieter way in. Friday and Saturday nights on the patio are louder, in the good way. Pick based on whether you want to hear the band or be around it.

Mexican and elevated Tex-Mex at 29675 Bulverde Lane, open seven days with a brunch menu from 10:00 AM. It doubles as an event venue.
Worth knowing before you search for it: this is a different business from the Cibolo Creek Vineyards that used to occupy the address. Different owners, different concept. If you find an old review, it is not about this place.

Bread, pastries, and coffee just over the Spring Branch line on TX-46 West, Thursday through Saturday from 9:00 AM to 2:00 PM. The right first stop on a Saturday before anything else on this list opens. thebluebirdbreadco.com
A neighborhood wine bar and bistro at 2471 Bulverde Road with live music, a cigar lounge, and a yard that works if you have kids along. It manages to be a date-night place and a family place on the same evening. They do not post who is playing, so call ahead if the band is the reason you are going. Closed Monday.
Insider tip: the yard is the reason to come. If the weather is halfway decent, do not let them seat you inside.

Small, intimate, and built for listening rather than talking over. An open mic on Thursdays and different acts on Friday and Saturday nights.
Insider tip: it seats a fraction of what the other places here do, so a good act fills it fast.
Guadalupe River State Park is a short drive north at 3350 Park Road 31, with four miles of river frontage for swimming, fishing, and tubing. The Honey Creek State Natural Area trailhead next door has 3.6 miles of trail, including an ADA-accessible route. Day passes must be reserved online and are not sold on site. Trails are open 7:00 AM to 7:00 PM, and you should carry the water you plan to drink.
Insider tip: the park's Facebook page is where closures and ranger programs get posted. Check it the morning you go.
Guadalupe River State Park · Honey Creek day passes
Morning: coffee and something baked at BlueBird.
Midday: the river at Guadalupe River State Park, or the Honey Creek trail if you booked it.
Late afternoon: Twine's yard, or a glass at Vine in the Village.
Evening: steak at Tejas, then the rodeo, then the saloon after.
No rodeo tickets? Specht's patio for dinner and music, and you have lost nothing.
Spring Branch is right there on 281 and adds Screaming Goat Yard & Tap, Bourbon & Branch, Throwbacks on 46, and The Desert Spoon. Most Bulverde nights could end there, and the two towns are effectively one weekend. We wrote that one up too: Things to Do in Spring Branch. If music is the whole point of the night, start with Live Music in Bulverde.
Bulverde venues confirm weekend lineups a few days out, usually on Instagram or Facebook, and several keep a website that is months out of date.
The Hill Country Hot Ticket is a free weekly email covering live music, food, and weekend events across Bulverde, Spring Branch, Canyon Lake, New Braunfels, and Blanco. We do the checking so you are not working through a dozen pages on a Thursday night. It goes out Thursday mornings and takes about two minutes to read.
The weekend, distilled.
